Mix: Combine the rum, simple syrup, mint and lime in a cocktail shaker or mason jar. Gently muddle the mint to release it’s flavors (you don’t need to muddle it into a million pieces though) and add ice. Cover and shake to combine.
Serve: Top with kombucha, a lime wedge and a sprig of mint. Enjoy!

How to Make Simple syrup: combine equal parts water and sugar in a small saucepan. Bring to boil and let simmer until sugar dissolves, about 3 minutes. Remove from heat and let cool completely. It can be stored in the refrigerator for up to one month.PREP AHEAD: Make the simple syrup in advance for a cocktail that comes together in minutes. LEFTOVERS/STORAGE: I wouldn’t recommend storing the completed cocktail, but you can store the simple syrup in the fridge for up to 1 month.
