Preheat oven to 200 degrees F. Line two large baking sheets with baking mats and set aside.
Slice apples. Set the apple on the side and, using a mandoline or sharp knife, thinly slice the apples.
Arrange the apple slices in a single layer on the baking sheets and sprinkle with cinnamon.
Bake for 1-1.5 hours, remove from oven and flip apple slices over. Return to the oven and bake for another 1-1.5 hours. Turn off the oven and leave the apple chips in the oven until it’s cool. The apple chips will continue to crisp up as they cool. Enjoy!

PREP AHEAD: These apple chips can be prepared in advance and stored in an airtight container for 3-4 days. They may start to lose their crispness after that if they aren’t stored properly.
