½ripe avocadohalved and pit removed. How to tell if your avocado is ripe: it should yield slightly to a gentle squeeze, but shouldn't be mushy or rock hard
drizzle of tamari, soy sauce, liquid aminos or coconut aminos
Prep: Scoop the avocado flesh out of the skin, slice and spread over rice cake
Drizzle: Top with tamari and sesame seeds

LEFTOVERS/STORAGE: Completed avocado rice cakes are better eaten fresh than stored. The toppings will leave you with a soggy rice cake if left for too long. But you can store plain rice cakes in an airtight container so they don’t get stale.
