Apple Wheat Berry Salad - a simple salad that uses wheat berry, an underrated whole grain. It’s a nutty and delicious salad with a simple lemon vinaigrette.
Boil: Combine wheat berries and water in a 2 quart pot over medium heat, bring to a boil and let simmer until wheat berries are tender, about 1 hour.
Combine: Drain wheat berries (if needed), then transfer to a medium bowl. Add apple, walnuts and green onions to bowl with wheat berries.
Prepare dressing: Whisk lemon juice, zest, olive oil, salt and pepper until combined.
Mix: Add dressing and mint just before serving. Enjoy!

PREP AHEAD: Make this salad up to 3 days ahead of time, but wait to add in the apple and mint until just before serving.LEFTOVERS/STORAGE: Store in a glass container for up 3-5 days.
