Combine nuts in a large bowl. Add honey, olive oil and spices. Stir until nut mixture is well coated. Spread out on a lined baking sheet.
Roast in oven for 15-20 minutes. You want the nuts to be crunchy, but don't let them burn. They will continue to crisp up a bit as they cool.
Remove from oven, sprinkle with Maldon Salt (or sea salt) and let cool. Enjoy!
