Instructions
Combine sugar, water, peach slices and mint to a small pot over low heat. Bring to a slight simmer and let gently simmer for 30 minutes. The peaches should be soft and the sugar should be completely dissolved. Remove from heat, strain (keep the peaches!), let cool to room temperature and chill in the fridge.
Shake: In a cocktail shaker or mason jar, add ice, gin and Peach Simple Syrup. Shake to combine.
Serve: Top with club soda and garnish with peach slices and fresh mint. Enjoy!
Notes
NOTES: Make sure you add the club soda after you combine the gin and simple syrup or you’ll have a fizzy mess.PREP AHEAD: You can prepare the simple syrup ahead of time, but because club soda loses its effervescence quickly, I recommend mixing everything just before serving. The Peach Simple Syrup can be stored in the fridge for up to a week. NUTRITION NOTES: This Peach Gin Fizz utilizes fresh peaches for sweetness, but it still contains simple syrup and alcohol.
