    Peach Gin Fizz - A refreshingly light summer beverage featuring juicy summer peaches, your favorite gin and fresh mint.

    Who doesn’t love a cold beverage on a hot day? Especially when said beverage utilizes the freshest, juiciest peaches and a flavorful burst of mint!

    I had some extra peaches leftover from the farmers market, and they were starting to look a little sad. But instead of tossing them out, I decided to make a delicious cocktail using the peaches to make a Peach Simple Syrup!

    This Peach Gin Fizz uses fresh summer peaches (made into a peach simple syrup), combined with a mixture of your favorite gin, mint and fizzy club soda. It’s super simple and great for a hot day!

    Ready to make this delicious Peach Gin Fizz? Let’s do it!

    1 - Make Peach Simple Syrup. Combine sugar, water, peaches and mint in a small pot. Bring to a simmer, reduce heat and let gently simmer for 30 minutes. The peaches should be soft and the sugar should be completely dissolved. Remove from heat, strain (save those peaches!), let cool to room temperature and chill in the fridge. 

    2 - Mix drink. Combine ice, gin, and simple syrup. Stir or shake to combine (I often combine them in a mason jar, shaking to combine) and pour into glasses. 

    3 - Top off with club soda and garnish with a couple peach slices (use the discarded peaches from the Peach Simple Syrup!) and mint leaves. Enjoy!

    Peach Gin Fizz: Tips, Tricks and Tools

    You don’t need much in terms of tools, but it’s helpful to have a cocktail shaker or mason jar (we just use a mason jar). You’ll also need eco-friendly cookware and serving glasses.

    Save the peaches from the Peach Simple Syrup. Don’t let them go to waste - I like to add them to the finished drink instead of fresh peaches. Though you could also use the simple syrup peaches over ice cream or in oatmeal (I also did this and it’s so delicious). 

    Make it a mocktail by omitting the gin and using a bit more club soda.

    Ingredients

    Peach Simple Syrup

    • 1 peach sliced
    • ½ cup sugar
    • ½ cup water
    • ¼ cup mint

    Peach Gin Fizz

    • 4 ounces peach simple syrup start with less and add more to your desired sweetness
    • 3 ounces gin
    • ice as desired
    • club soda to taste
    • peach slices for garnish
    • mint leaves for garnish

    Instructions

    • Combine sugar, water, peach slices and mint to a small pot over low heat. Bring to a slight simmer and let gently simmer for 30 minutes. The peaches should be soft and the sugar should be completely dissolved. Remove from heat, strain (keep the peaches!), let cool to room temperature and chill in the fridge. 
    • Shake: In a cocktail shaker or mason jar, add ice, gin and Peach Simple Syrup. Shake to combine. 
    • Serve: Top with club soda and garnish with peach slices and fresh mint. Enjoy!

    Notes

    NOTES: Make sure you add the club soda after you combine the gin and simple syrup or you’ll have a fizzy mess.
    PREP AHEAD: You can prepare the simple syrup ahead of time, but because club soda loses its effervescence quickly, I recommend mixing everything just before serving. The Peach Simple Syrup can be stored in the fridge for up to a week. 
    NUTRITION NOTES: This Peach Gin Fizz utilizes fresh peaches for sweetness, but it still contains simple syrup and alcohol. Consume in moderation.
