Epic Cranturkey Sandwich

Epic CranTurkey Sandwich - A perfect blend of tangy cranberry sauce, leftover Thanksgiving turkey, sweet caramelized onion, spicy stone ground mustard, creamy goat cheese and fresh arugula. All on your favorite whole grain bread or roll.

Thanksgiving is probably my favorite holiday. It’s all about food, friends and family gathering  together, and being grateful. I also love the food - mashed potatoes, pumpkin pie, fall salad - it’s all so good. 

Waking up the day after Thanksgiving with a fridge full of delicious food is the best. I love reproducing another Thanksgiving meal out of all those leftovers, but I also like the challenge of creating new meals with the yummy spread of leftovers. Thus the Epic CranTurkey Sandwich was born. It’s quick, flavorful and uses up those Thanksgiving leftovers!

This Epic CranTurkey Sandwich is super simple to make...

All you have to do is layer the ingredients on your bread of choice. I usually layer it with the cranberry sauce and stone ground mustard, then turkey, caramelized onions, goat cheese, sage leaves and lastly, arugula leaves. My mouth is watering just thinking about it...

Epic CranTurkey Sandwich: Tips, Tricks and Tools

Change it up depending on what you have for leftovers. Use brie instead of goat cheese, omit the turkey to create a vegetarian version, use raspberry jam instead of cranberry sauce. Flexibility is key!

Epic Cranturkey Sandwich

Epic CranTurkey Sandwich - A perfect blend of tangy cranberry sauce, leftover Thanksgiving turkey, sweet caramelized onion, spicy stone ground mustard, creamy goat cheese and fresh arugula. All on your favorite whole grain bread or roll.

Ingredients

  • 2 slices whole grain bread
  • 1-2 tablespoon cranberry sauce
  • 3-4 ounces turkey cooked, sliced
  • ¼ cup onion caramelized
  • 1 ounce goat cheese
  • 1-2 tablespoon stone ground mustard
  • 2-3 leaves sage
  • 1 handful arugula
US Customary - Metric

Instructions

  • Assemble: Layer cranberry sauce, turkey, stone ground mustard, onions, goat cheese, sage and arugula between two slices of bread. (I like to cut mine in half). Enjoy!

Notes

PREP AHEAD: Ideally you’ll have the cranberry sauce and turkey leftovers from Thanksgiving! You can also use turkey meat and jam/chutney for a fall-flavored sandwich anytime of the year.
LEFTOVERS/STORAGE: Store sandwich ingredients separately, building a fresh sandwich at each serving. 
NUTRITION NOTES: This Epic CranTurkey Sandwich is a complete meal if paired with a side vegetable (use some of those leftover veggie side dishes from your Thanksgiving meal). It contains carbohydrates (bread, cranberry sauce), protein (turkey, goat cheese) and fat (goat cheese) and it’s also a good source of fiber.
