Kombucha is made by fermented black tea with sugar and a SCOBY— Symbiotic Culture Of Bacteria and Yeast. I know, it sounds gross, alien, and certainly looks unappetizing. But making kombucha isn’t just a fad, people have been brewing up kombucha for hundreds, if not thousands of years!
The SCOBY ferments the black tea and sugar into a slightly fizzy, tangy beverage. You can flavor kombucha or you can skip all the fermenting work and buy pre-made kombucha from the store.
Kombucha is a tasty beverage that also boasts some great probiotic benefits!Since it’s fermented, it contains beneficial probiotic bacteria that may help improve gut and digestive health.
I generally drink kombucha on its own or with a little sparkling water, but I wanted to kick it up a notch so this Friday-style kombucha was born. Kombucha, simple syrup, rum and mint and you’ve got yourself a refreshing Mint Kombucha Mojito.
Well here's to your daily dose of probiotics, the Friday version. Mint Kombucha Mojito anyone?
1- Prepare the simple syrup. Combine 1 part sugar and 1 part water in a small saucepan, bring to a boil and let simmer until the sugar is completely dissolved, about 3 minutes. Remove from heat, let it cool completely. This simple syrup can be stored in the fridge for up to 1 month.
2 - Combine rum, simple syrup, mint and lime in a cocktail shaker or mason jar. Gently muddle the mint to release its flavors. Add ice, cover and shake to combine.
3 - Top with kombucha, a lime wedge and a sprig of mint. Enjoy!
Mint Kombucha Mojito: Tips, Tricks and Tools
To mix this drink, we use a mason jar, but you can use a regular cocktail shaker instead. And don't forget your reusable metal straws! Just a few of our favorite helpful kitchen tools!
Purchase high quality ingredients: Consider getting a quality alcohol. If you buy from the bottom of the barrel, your drink may taste accordingly... No need to go for top shelf either, but find a nice middle ground. Go for something local to your area! Support the little guys when you can, both microscopic and human-sized. Ahh yes, probiotic puns.
Buying Kombucha. You can find kombucha in the refrigerated beverage section. Different brands of kombucha will taste different so try a few out to find ones you enjoy. Some will taste more vinegary - this is generally because they’re fermented longer.
Watch out for store-bought kombucha with lots of added sugar. Kombucha will contain sugar because it’s needed to ferment, but we don’t want too much added after fermentation. Look for kombucha in a glass container, ideally a darker bottle, with a short ingredients list, not filled with juice, unpasteurized, and just natural ingredients.

Mint Kombucha Mojito
Ingredients
- 1.5 ounces white rum
- ½ ounce simple syrup directions below
- 10 mint leaves
- ½ ounce lime juice freshly squeezed is ideal
- ice cubes
Instructions
- Mix: Combine the rum, simple syrup, mint and lime in a cocktail shaker or mason jar. Gently muddle the mint to release it’s flavors (you don’t need to muddle it into a million pieces though) and add ice. Cover and shake to combine.
- Serve: Top with kombucha, a lime wedge and a sprig of mint. Enjoy!
