Apricots are the first sign of summer. You can’t beat the juiciness of freshly picked apricots. Part of the stone fruit family (with peaches and plums), you’ll find apricots in season from early May through July.
Just like other stone fruit (peaches, plums, cherries, nectarines), apricots have that hard pit in the center. Make sure to discard the pit, it isn’t edible. Even though they have a heart of stone, apricots still provide some great health benefits.
And I’ve got the perfect recipe for your apricots. Caramelized Apricot Bruschetta. A fruit bruschetta recipe ready in under 20 minutes, the perfect party appetizer or snack.
🧾 Ingredients
Bakery fresh bread. Sandwich bread will not do this recipe justice. Get the good loaf from the bakery. A baguette or whole wheat french bread is a great size for bite-size bruschetta.
Use leftover bread to make breadcrumbs, french toast, bread pudding or a strata.
Fresh Apricots. Apricots are in season from July through September. Opt for in-season first – if you see apricots in December, they’re most likely not local, and will have less flavor and fewer nutrients. Getting them locally from a farmer’s market is the best bet for finding fresher and tastier apricots.
Look for apricots that are plump and golden in color. Avoid the bruised and shriveled ones. The sniff test is always a good indicator - choose apricots that have a sweet and apricot-y fragrance.
Real Maple Syrup or quality Honey: Look for 100% real maple syrup (i.e. no corn syrup) or, ideally, local honey.
Herbs - fresh mint and thyme are super yummy on this bruschetta. In a pinch, you could use dried mint, but I would skip the dried or ground thyme.
Pistachios - though they're optional, they add a nice crunch. You could use chopped almonds instead.
Ricotta - I usually go for full-fat ricotta, but skim also works. You could also try cream cheese or yogurt.
Lemon - we're going to use both the lemon juice and zest. This will give the ricotta a bright and fresh flavor.
🔪 How to Make Caramelized Apricot Bruschetta?
1↠ Caramelize the apricots. Slice the apricots first, then add sliced apricots and honey/maple syrup to a medium pan (affiliate) over low-medium heat.
Saute for about 10 minutes or until apricots are caramelized and soft, but not mushy.
2 ↠ Slice the bread. While the apricots are cooking, slice bread into 1-inch slices. Set aside.
3 ↠ Prepare lemon ricotta. In a small bowl (affiliate), mix ricotta, honey, salt, lemon juice and zest until combined.
4 ↠ Assemble. Spread the ricotta mixture over each bread slice, add caramelized apricots and garnish with mint, thyme and pistachios. Enjoy!
💭 Tips, Tricks and Tools
Tools (affiliates): You’ll need a pan (I love my cast-iron skillet), a quality cutting board and a sharp knife. A small mixing bowl will also be helpful.
Substitutions - Try a different stone fruit (peaches, nectarines, plums). Instead of ricotta, use yogurt or cream cheese.
Cutting an apricot - apricots have a pit in the middle, so you can cut them similar to how you would cut an avocado.
Cut into the side of the apricot and around the whole seam, then gently twist the halves apart. If your apricot is ripe, you may not need to twist - the halves may just come apart.

Caramelized Apricot Bruschetta
Ingredients
Bruschetta
- 1 loaf whole wheat french bread or baguette
- 5-6 apricots sliced
- 1 tablespoon honey or maple syrup
- mint for garnish
- thyme for garnish
- pistachios (optional) chopped, for garnish
Lemon Ricotta
- 1 (15 ounce) container ricotta
- 1 lemon juice + zest
- 1-2 tablespoons honey depending on desired level of sweetness
- salt a pinch
Instructions
- Caramelize apricots: Pour honey/maple syrup into a cast iron (or non stick pan), add apricots and saute for about 10 minutes, or until apricots are caramelized
- Slice bread: While the apricots cook, slice the bread into 1-inch thick slices, set aside
- Lemon ricotta: Mix ricotta, lemon juice and zest, honey and salt in a small bowl
- Assemble: Spread ricotta mixture over each slice of bread, add caramelized apricots, garnish with mint, thyme and chopped pistachios. Enjoy!
