Miso is a fermented food that comes with with plenty of wonderful health benefits. In my never-ending search for healthy fermented food recipes, the idea for this recipe popped into my head! Wanting to incorporate miso, I thought it would add some nice flavor to our side of butternut squash. And boy did it!
The meal was so good, every bite carries a punch of delicious flavor. So here it is. Enjoy the wonderful flavor AND get your daily dose of beneficial gut bacteria with an assist from this high quality fermented food.

1 - Preheat oven to 425 degrees F.
2 - Prep squash: While the oven is heating up, wash and peel the squash. Cut it in half and remove the seeds - save them for roasted squash seeds! Then slice or cube the squash.
3 - Season squash: In a large bowl combine minced garlic, olive oil, miso paste, honey, rice vinegar and pepper. Mix until combined. Add squash to the bowl and stir until the squash is fully coated.
4 - Bake: Arrange the squash in a single layer on a lined baking sheet. Roast until the squash is tender, about 30 minutes.
5 - Serve: Garnish with sesame seeds and enjoy!

Miso Glazed Squash
Ingredients
- 1 butternut squash peeled, halved, seeds removed, and sliced - save those seed and roast them for a tasty snack!
- 2 cloves garlic minced
- 2 tablespoons olive oil
- 2 tablespoons white miso
- 2 tablespoons honey
- 1 ½ teaspoons rice vinegar
- freshly ground pepper to taste
- sesame seeds for garnish
Instructions
- Preheat oven to 425 degrees F.
- Combine: In a large bowl, combine garlic, olive oil, miso paste, honey, rice vinegar and pepper. Mix until combined. Add sliced squash to the bowl and stir until the squash is well coated.
- Bake: Spread sliced squash on lined baking sheet in a single layer (you may need to use more than one baking sheet to fit all the squash) and roast for 30-35 minutes or until the squash is tender.
- Serve: Garnish with sesame seeds and enjoy!
