Snacks are a regular occurrence in our house, so I’m always looking for new snack ideas to keep things fresh.
You can never go wrong with a freshly sliced apple with just about any cheese variety. But variety is the spice of life, and some days call for a more substantial snack. That’s where healthy fats come in - bring on the Avocado Rice Cakes!

These Avocado Rice Cakes are super fast, easy, and delicious. No more boring rice cakes!
🧾 Ingredients
Brown rice cake - Though boring on its own, rice cakes can become a crunchy base for a delicious snack. Look for ones made with real ingredients, I really like these rice cakes. Though the seaweed ones are also great, with that added umami punch. Opt for brown rice for a bit more fiber.
Avocado - look for ripe avocados, ones that are firm, but give a little to gentle pressure.
Soy sauce: Liquid Aminos are our go-to soy sauce alternative, but any soy sauce (ideally low sodium), coconut aminos, or tamari also work. High quality, aged soy sauce is also a great option. It’s generally so flavorful that you really only need a little.
🔪 How to make Avocado Rice Cakes
1 - Prep the avocado - using a knife, slice down the middle and around the avocado. Avocados have a large pit in the middle, so you won’t be able to cut straight through.
Cut around the pit, then twist the avocado halves in opposite directions until they come apart. Remove the pit. It’s common practice to chop into the exposed pit with a chef's knife for easy removal. You can also simply scoop out the pit with a spoon.
2- Scoop out and slice the avocado flesh, then spread over the rice cake. Slice it with the skin on, or remove the skin to slice into strips. I usually remove the flesh from the skin first, but either method will work just fine. Depending on the size of the avocado, ¼ - ½ of an avocado is usually the perfect amount.
3 - Drizzle with tamari/soy sauce and sprinkle with sesame seeds.
4 - Enjoy your quick and easy snack!

Super Easy Avocado Rice Cake Snack
Ingredients
- 1 brown rice cake
- ½ ripe avocado halved and pit removed. How to tell if your avocado is ripe: it should yield slightly to a gentle squeeze, but shouldn't be mushy or rock hard
- drizzle of tamari, soy sauce, liquid aminos or coconut aminos
- white or black sesame seeds
Instructions
- Prep: Scoop the avocado flesh out of the skin, slice and spread over rice cake
- Drizzle: Top with tamari and sesame seeds
- Enjoy!
