Have you ever had ricotta toast? It’s a simple recipe with lots of variations. It all starts with a slice of bakery fresh bread, topped with a slathering of ricotta cheese, and a whole range of topping options.
🥪 Ricotta Toast Toppings
- Banana, walnut, cinnamon, honey
- Soft scrambled eggs, capers, black pepper
- Pears, honey, thyme
- Blackberries, balsamic vinegar, mint
- Blueberries, pistachios, lime zest
- Lemon zest, basil, honey, red pepper flakes
- Avocado, pumpkin seeds, sesame seeds, lemon zest, olive oil
- Roasted tomatoes, rosemary, sea salt
- Radish, green onion, freshly ground black pepper
🔪 Instructions
Make the base. Toast the bread in a toaster or in a pan on the stovetop. Then slather the ricotta over the toast.
Then add your desired toppings. Some variations may require roasting tomatoes or scrambling eggs, but most consist of just adding the ingredients on top of the toast. Feel free to create any variations you desire and enjoy!

9 ways to make ricotta toast
Ingredients
Ricotta toast base
- 1 slice bread go for bakery fresh, and hearty whole grain
- 1 (15 ounce) container ricotta 2-3 tablespoon per slice
Roasted tomato and rosemary
- ½ cup cherry tomatoes
- 1 tablespoon olive oil
- 2 sprigs rosemary
- sea salt + pepper to taste
Blackberry, balsamic vinegar and mint
- 1 handful blackberries or strawberries
- ½ tablespoon balsamic vinegar
- mint leaves for garnish
Banana, cinnamon and walnut
- ½ banana sliced
- ¼ teaspoon cinnamon
- 1 tablespoon walnuts chopped
- honey drizzle for garnish
Honey, pear and thyme
- ½ pear sliced
- ½ tablespoon fresh thyme
- honey drizzle for garnish
Lemon zest, basil, honey and red pepper flakes
- 1 lemon zest in strips
- 1 handful basil leaves
- red pepper flakes sprinkle
- honey drizzle for garnish
Blueberries and pistachios
- ¼ cup blueberries fresh or frozen (thawed)
- 1-2 tablespoon pistachios shells removed
- lime zest garnish
Avocado, pumpkin seeds and sesame seeds
- ½ avocado thinly sliced
- 1 tablespoon pumpkin seeds
- salt + pepper to taste
- sesame seeds + lemon zest garnish
Soft scrambled eggs with capers
- 1 egg
- 1 tablespoon milk optional
- 2 teaspoon butter
- 1 tablespoon capers
- salt + pepper to taste
Radish, scallion and black pepper
- 3-4 radishes thinly sliced
- 1 scallion thinly sliced on a bias
- salt + pepper to taste
Instructions
Base
- Toast bread in a toaster or in a pan on the stovetop.
- Slather the ricotta over the toast and add toppings as desired below.
Roasted tomato and rosemary
- Preheat oven to 400 degrees F. Toss tomatoes in olive oil and spread out on a lined baking sheet (Check out our favorite baking sheet liners here). Season with rosemary, sea salt, and freshly ground pepper to taste. Roast 20-30 minutes or until tomatoes “pop”. Top ricotta toast with tomatoes and rosemary. Enjoy immediately!
Blackberry, balsamic vinegar and mint
- Half berries and spread out on ricotta toast. Drizzle balsamic vinegar over toast, garnish with mint leaves and enjoy!
Banana, cinnamon and walnut
- Spread banana out on ricotta toast. Sprinkle cinnamon and walnuts over the banana. Drizzle honey over toast and enjoy!
Honey, pear and thyme
- Spread pear out over ricotta toast, sprinkle thyme over pear. Drizzle with honey and enjoy!
Lemon zest, basil, honey and red pepper flakes
- Spread lemon zest and basil over ricotta toast. Garnish with red pepper flakes and honey. Enjoy!
Blueberries and pistachios
- Spread blueberries out over ricotta toast. I like to mash the berries a bit to release the juices. Garnish with pistachios, and lime zest and enjoy!
Avocado, pumpkin seeds and sesame seeds
- Spread avocado out over ricotta toast. Sprinkle with pumpkin seeds and sesame seeds. Garnish with lemon zest. Salt and pepper to taste. Enjoy!
Soft scrambled eggs with capers
- Combine eggs and milk in a small bowl, whisk until frothy. Heat small non-stick pan over medium heat, add butter. When the butter is just beginning to bubble, add the egg mixture. When the edges of the egg is just starting to set, using a rubber scrapper, gently swipe the egg across the pan. Don’t flip the egg. Continue to gently swipe the egg across the pan as it cooks. Remove the pan from the burner just as the egg is starting to set. The egg will continue to cook a bit more in the pan.
- Spread the soft scrambled eggs out over the ricotta cheese. Top with capers, salt, and pepper. Enjoy!
Radish, scallions and black pepper
- Spread radishes out over ricotta toast. Sprinkle scallions over toast. Season with salt and pepper to taste. Enjoy!

I toasted my pecans with the cinnamon and brown sugar before topping and put the honey between the banana and pecans- helped hold things together better.
