Lemon Dijon Vinaigrette

Lemon Dijon Vinaigrette - a super simple dressing recipe that comes together in less than 5 minutes and will add a fresh zing to your favorite salad or grain bowl.

Punchy sauces and dressings are my jam. Sauces are that secret ingredient that can really take a dish to the next level. Adding plenty of flavor, they are especially important for plant-based recipes because they add fat so your body can properly absorb the nutrients from all those veggies. 

This lemon vinaigrette recipe is one of my favorite dressings. It’s great for your basic, everyday salad and it’s a staple with our Zesty Italian Farro Bowl. 

Do you have 5 minutes? Great, you’re ready to make this zesty and flavorful dressing!

🧾Lemon Dijon dressing Ingredients

Shallot - they're like an onion, but have a more delicate, less pungent flavor. Great for dressings since they're less pungent.

Lemon - real lemon juice is best. Save the zest and use it in pasta or this delicious Lemon Dutch Baby Pancake. Or if you’re making this for our Zesty Italian Farro Bowl, save it because you’ll use the zest to give the chickpeas some extra zing.

Dijon - In a pinch you could use regular mustard, but opt for Dijon if you can.

Honey - I love using honey because it provides a few extra nutrients and anti-bacterial compounds compared to regular sweeteners, though it is still sugar so be mindful of portion sizes in general. Use maple syrup if you’re vegan.

Olive oil - look for extra virgin olive oil and, since we're using it in a dressing, opt for a better quality oil if you can.

Herbs - though not necessary, I do like add some dried oregano and thyme for a little extra flavor.

🥗 Instructions

This simple dressing recipe comes together quickly and with minimal tools. 

1 - Prepare dressing. In a small bowl or jar, add shallot, lemon juice, Dijon mustard, honey and olive oil. Shake or whisk to combine. Season with oregano, thyme, salt and pepper. 

Yep, it's that simple.

💭 Tips, Tricks and Tools

This lemon dijon vinaigrette is super quick and easy, but there are a few tips and tools that will make it even easier.

Tools: I like to use a mason jar because you can combine and store in the same container - that means no extra dishes! You can also use a small bowl and whisk to combine this dressing. 

Don’t toss the zest. Use it in pasta or this delicious Lemon Dutch Baby Pancake.

Make it vegan by using maple syrup instead of honey.

🍋 Nutrition

Lemon is a great source of vitamins C and many antioxidants. This dressing’s high fat content, especially from a healthy fat like olive oil, can help the body absorb fat-soluble vitamins like Vitamins A, D, E and K from vegetables, so it’s a perfect pair with your salad or vegetable side dish.

Lemon Dijon Vinaigrette

Ingredients

  • 1 small shallot diced
  • 1 lemon juice
  • 1 tablespoon Dijon mustard
  • 2 teaspoon maple syrup or honey
  • ½ cup olive oil
  • ½ teaspoon dried oregano
  • ½ teaspoon dried thyme
  • salt and pepper to taste

Instructions

  • Prepare dressing. In a small bowl or jar, combine shallots, lemon juice, Dijon mustard, honey, and olive oil. Whisk or shake to combine. Season with oregane, thyme, salt and pepper.

Notes

PREP AHEAD: This can be prepared ahead time and stored in the fridge for up to 2 weeks.
LEFTOVERS/STORAGE: Store leftovers in a glass container (like a mason jar) in the fridge for up to 2 weeks. Depending on the type of oil you use, your dressing may solidify slightly in the fridge. Don’t worry, it’s still good, simply let it warm up to room temperature and use as normal. 
NUTRITION NOTES: Dressings inherently have fat, but this dressing uses a healthy fat like olive oil. Fat is important to help your body absorb nutrients. In addition, this dressing is vegan, gluten-free and is a good source of vitamin C. 
SERVING SUGGESTIONS: Serve with your favorite salad or grain bowl like our Zesty Italian Farro Bowl.
