I’m sure you’ve had peanut butter and almond butter, maybe even sunflower seed butter, but have you ever had cashew butter? What about a creamy cashew butter blended with the sweetness of dates?

This delicious spread is great with so many things. Put it in your oatmeal (man that sounds good), on a slice of toast or crackers, use as a dipping sauce for fruit, great on banana pancakes, or on lefse—boy that’d be good! If you’ve never heard of lefse, it’s about time to. It’s a Norwegian potato flatbread, which is quite popular in Minnesota.

  • Eye health – A contender with carrots—cashews contain high levels of lutein and zeaxanthin, antioxidants that protect the eyes from damage and decrease the risk of cataracts.

Well it’s time to try out a new spread, full of dates and cashew-y goodness. Creamy Cashew Date Butter. All you need is 5 ingredients and 20 minutes. This delectable spread is super simple to make.

Ready to make this Creamy Cashew Date Butter? Let’s do it!

1 - Soak dates. Remove the date pit and place dates in a small bowl of water until they are super soft, 10-15 minutes.

2 - Toast Cashews either in the oven or in a skillet on the stovetop until golden brown, about 5-8 minutes. 

3 - Transfer cashews to a food processor or high powered blender and pulse until finely chopped. Add softened dates, maple syrup and sea salt. Blend until creamy and smooth. Enjoy!

Creamy Cashew Date Butter: Tips, Tricks and Tools

This spread is super simple, but there are a couple things I recommend to make it easier. 

Tools: you’ll need a food processor or high powered blender, a small bowl and either a baking sheet or skillet (depending on how you toast your cashews). 

Soaking and toasting: It is not completely necessary to toast the cashews (especially if you purchase roasted cashews), but it adds flavor and complexity to the cashew butter.

For the dates, if your dates are already super soft, you may not need to soak them, but I find it’s best to soak them so they become a paste rather than merely breaking up into pieces. 

Prep ahead: This cashew date butter can be stored in the fridge for 2-4 months, though we usually go through it faster than that!

Ingredients

  • 2 ½ cups cashews
  • 1 cup dates
  • ¼ cup maple syrup
  • ¼ teaspoon Himalayan sea salt
US Customary - Metric

Instructions

  • Soak: Put dates in water until soft
  • Toast cashews: either in oven or on the stovetop for 5-8 minutes.
  • Blend: Place cashews in a food processor or blender and pulse until roughly chopped. Add softened dates,  maple syrup and sea salt and blend until creamy. Enjoy!

Notes

LEFTOVERS/STORAGE: Store in an airtight glass container (I like to use a mason jar) in the fridge for 2-4 months. 
NUTRITION NOTES: Cashews are a great source of many different vitamins, minerals and antioxidants. This Cashew Date Butter is naturally sweetened with dates which also add fiber.  
SERVING SUGGESTIONS: Spread over crackers or toast, add to oatmeal, use as a fruit dip - the possibilities are endless!

    Hi there! This is delicious, but in the fridge, it became really hard and sticky such that it's not spreadable and unfortunately a little tricky to use/eat. Is there a way to thin it out a bit?

      Hi Nicole!

      It can be a bit thick when it's cold! I would recommend a few things - leave out of the fridge to warm up a bit before using it or stir in a little bit of a neutral tasting oil (like canola oil) to thin it out a bit. You also could add a bit more maple syrup, but that will make it sweeter so just keep that in mind.
